It is just that cooking eggs, bacon and coffee is fine and pretty rudimentary but preparing raw fish...and making a marinade is a pretty big step up. Fish is nuanced and marinade can either enhance or overwhelm the taste. And timing is everything. Wait too long and you have made sink trap slush. I applaud you wanting to experiment. Perhaps you could start out with pan frying (sauteing) a nice piece of snapper filet and a browned butter sauce. Just don't overcook it into a piece of shoe leather and don't turn the butter solids black. Otherwise you will go DAMN!
Ceviche I’ve had Halibut sashimi like that (on the way in from a charter, fresh off the fish) and it’s phenomenal - just added some salsa as he cut off pieces.
Very tough to do at home. You have to have the right type of limes and peppers and it’s all about temperature and timing. Most restaurants can’t get it right either but there are some Peruvian places in South Florida that do. I think they import their limes and peppers. A good Peruvian ceviche might be the most delicious food ever.
