I’ve only had the Green and Red. The Midleton distillery tour is worth a visit. I was adamant we visit when my wife planned a trip to Blarney. Teeling has some good stuff as well.
Scots-Irish generally refers to the what is also known as Ulster Scot. During and after the Jacobean wars in England/Scotland a large number moved to Ireland and then after generations in Ireland to the US (not related to the later diaspora caused by the potato famine in the mid 19th century). The term most likely got started in the US to distinguish family heritage vs. the Irish immigrants that came later. My family is full of Scottish surnames MacDonald, MacMullen, Calhoun, MacQorquodale most of whom made some sort of pitstop in Ireland.
