    I have all the fixing for posole rojo. Some folks call it pozole. It is all good, but the word posole/pozole in Spanish means hominy. And there are many variations.

    I often make a green posole with chicken and tomatillos and roasted peppitas (raw pumpkin seeds), but red posole uses cheap cuts of pork (it is a stew and I use pork shoulder) and a red sauce with ancho chilies and chiles de arbol. Topping include diced avocado, sliced radishes, chopped cilantro, some lettuce, etc.

    Same here. There used to be a 3rd generation family owned place down in south St.Pete on 4th Street South that was the best I've ever had--have no idea if it's still there and in business.

    Smoking a shank portion ham over charcoal and apple wood today. Jan's making her home made baked mac & cheese to go along with fresh zipper peas and fried cornbread.

    May need to go back to the basics like frank and beans to cook up some gator hitting.

    Or maybe fix up one of those "food-doo dolls" as in that wing place commercial!

    That is what is great about baseball. You lose two and you need to keep your sense of humor. Lose two in football and the season is over.

    Cooking my spaghetti today along with fresh salad and 5-Grain Italian Bead. Tomorrow it will be Beef Short Ribs on the smoker...

    I am smoking some St Louis cut ribs tomorrow during the basketball game. The down side is that I won't be attending the LSU/UF baseball game even though I have great seats. I will be checking in on the baseball game as I expect that brooms will be in order.
