Outside the dugout: What's cooking?

    It helps that I have 3 yards to maintain (a bit over 1.5 acres), I try to ride my bike a few times per week at 35 miles each trip, and take my MIL's dog for long walks (2 to 3 miles) every once in a while.

    But I have put on a few pounds after I stopped bike racing when I hit 60. My race weight was around 175. Now carrying about 230 at 6' 2". I once got down to 167, but I didn't feel good at that weight. I am not "big boned" but I have a long torso.

    Tonight I'll be grilling fresh Mahi-Mahi and shrimp--I will use real butter, fresh squeezed lemon, and garlic to baste them with--seasoning will be coarse black pepper and Everglades Seasoning--Fresh Romaine Classic salad topped off with vine ripe tomatoes to go with--
    The longnecks are ice cold and ready to do their part this afternoon--

    The yard work is done--tonight it'll be chicken halves grilled with Pat's Ho-made on the last two turns--we will have cream 40's & petite butterbeans and fresh green beans & new potatoes to go with--

    The ice cold longnecks are well deserved today--enjoy my friends!

    Last night we had a bridge night with two of my wife's law colleagues/friends. I made a pork tenderloin served with a cream/shallot/fig sauce and a baby spinach/baby arugula salad. My wife made asparagus risotto.

    Tonight we are having sloppy joes made from scratch.

    We are back up at Alan's for Kayla & Tim's closing on their new home tomorrow and it's my turn in the kitchen--it will be fried cubed pork steak with fresh field peas with snaps seasoned with smoked bacon and grilled bi-colored cob corn--

    Iced cold longnecks on Alan's front porch on his mountain are the best--

    This afternoon is Tim & Kayla's closing so we are also going to take advantage of the slightly cooler weather on the mountain--I've got a large pot of home-made chili simmering which we will serve over a bed of white rice and topped with extra sharp shredded cheddar--

    As always the ice cold longnecks on the mountain are as good as it gets--

    Inch thick ribeyes marinated in olive oil, garlic, and flat leaf parsley with a cream cheese, shallot, serrano, rice wine vinegar topping.

    Green beans cooked in the oven with harissa, cumin, and olive oil.

    Well, Alan's playing golf with a buddy of his that also is one of today's up and coming Country singers, JB Bryant--so I'm on grill duty--(big grin)--
    Tonight we are grilling chicken halves that will be topped with Everglades Mopping Sauce the last two turns--fresh stewed yellow squash and vidalia onions and fresh steamed cabbage to go with--

    And for no particular reason--
    The ice cold longnecks are especially good today--

    Made pork bulgogi tonight. That is a Korean spicy pork (usually shoulder) dish. Very tasty.

    I like to serve it wrapped in Napa cabbage.

    We are back home and tonight I'll be grilling fresh grouper and shrimp--seasoned with coarse black pepper and Everglades seasoning then I will baste them with melted real butter, fresh squeezed lemons, and crushed garlic--our side tonight with be a Caesar salad--
    The Joe Patti's Seafood Cocktail Sauce is the perfect touch on the side of your plate--

    The ice cold longnecks on the back porch are especially relaxing after a week on the road--

    Tonight's fare will be grilled hamburger steak seasoned with McCormick's Worcestershire Pub Burger seasoning--also on the grill will be a couple of ears of fresh bi-color cob corn with a fresh classic romaine salad topped with vine-ripe tomatoes to go with--

    The ice cold longnecks tonight are the aluminum bottles of Mich Ultra which is another gear of col'beer--;)

    Damn. I would have driven from Gainesville with a cooler full of long necks for a taste of that.

    I pulled a bottle of Salvestrin sangiovese out of the wine cellar a few days ago and my wife said to save it until I made pasta bolognese. So guess what I am making today.

    Mine is without sugar--
    2 Cups fine sifted corn meal
    2/3 Cup self-rising flour
    1 Tsp salt
    2 1/2 Cups water
    Mix well--spoon or hand patty

    Here, cast iron is always the choice--

    74, I applaud you for fixing it in style. My dear Grandma from Nashville (properly sounded out as Nayashville) made it with no sugar. It seems to be impossible to get it anywhere with no sugar without making it yourself. It goes with many things including my personal fave - homemade chili.

    Cornbread has no sugar and chili has no beans in spite of what my mom cooked and my wife thinks.

    And you must have a cast iron skillet to do it right.
