    Got two dozen jalapeno poppers all prepped for the oven. I prefer mine without bacon. Had to make mine with lower fat cream cheese because my Publix had a sale on original Philadelphia Cream Cheese and they were out. I suspect they will be fine.

    Hot and sour soup tonight.

    I made them 50% larger than normal and then we all watched the game again. What a special performance.

    We’re at Alan & Abbey’s-he’s grilling wings and cut up pork tenderloin to make appetizers out of.

    The ice cold longnecks are on hand as well as the chilled wine.

    I have been thinking about getting an air fryer mostly for making chicken wings.

    Pork tenderloin as one of the proteins in the hot and sour soup. Also firm tofu and spicy tofu.

    And left over pork tenderloin for stir fry and escarole soup later this week.

    In all honesty Lurk I have grilled wings for so long we just absolutely prefer them grilled over fried—hands down.

    Air fried is a totally different thing than fried in oil. Actually closer to grilled but without as much prep.

    Gotcha-
    I cut the flappers off and then put them in cold water for 1hr. Then I season them with the Everglades and coarse black pepper and grill’em. I get zero complaints.

    Picking up some soup today that one of my client's made for me.

    Claude Monet’s Potato Leek.

    She says: "it is very simple and has no milk or cream in it"

    Simple works for me! ;)

    With all the jalapeno poppers and nachos we made last night we never got around to making the hot and sour sour. So I am making it tonight.

    That soup was VERY good....going to look up the recipe!

    Edit...found this one:

    1/2 cup unsalted butter
    6 large leeks, white parts only, cut into 1/2 inch slices
    1 teaspoon salt
    4 large potatoes, sliced (with slices quartered)
    fresh parsley, chopped for garnish
    seasonings

    Provides 4 servings

    Heat 1/4 cup of butter in a (heavy) pan and sauté the leeks. While they are cooking, heat 1 quart water with the salt to just below a boil. Add the water to the leeks, all at once. Cover the pan, reduce the heat and simmer for 45 minutes. Add the sliced (I quarter) potatoes, add seasonings, cover, and continue cooking the soup for 20 minutes. Add the rest of the butter before serving. Sprinkle parsley over the top of the soup. Delicious.

    We’ve got a wet, cold, and dreary day here today and looking like for the next 2-3 days. It’s 37* and the high was 41* today.

    So that makes this evening the perfect time to have the second round of that pot of white chicken chili. Again it’ll be topped with freshly sliced jalapeños and Tex-Mex cheese. Tortillas multi-grain scoops will be on the side.

    The weather will win out and I will enjoy a tumbler of Knob Creek 100*—I’m sure Ms. Jan will stick with her chilled wine.

    I am going to make hot dogs to eat whilst watching the Gators play hoops tonight. Pretty much Chicago style but Hebrew National dogs instead of Vienna Beef. Both are 100% beef and kosher but the Hebrew National dogs have a bit more garlic. Both work well but Vienna Beef dogs are the hot dogs of my youth so my preference. Also no poppy seeds on the buns. I have added them with a melted butter wash when I make truly authentic Chicago dogs with Vienna Beef dogs but I save my few remaining packages for very special occasions. I will be offering the dogs with authentic Chicago hot dog relish and sport peppers.

    One great thing about Vienna Beef hot dogs is that they come in a package of eight, just like hot dog buns. I always thought it weird that hot dogs usually come in packages of six and the buns in packages of eight. Jerry Seinfeld could make a comedy bit about that. Just his kind of humor.

    FYI: the Oscar Meyer Angus beef wieners I buy come in 8 packs. ;)

    For me tonight - Chicken and Dumplings soup - Marketside brand from Walmart. Delicious and just what I needed leading up to our Gator BB game with the cowbells. :)

    I would use a waxy potato for this dish like a Yukon Gold. New potatoes or fingerlings can also be waxy but you would need way more than four of them.

    Lurk - at my bank today, the lady teller mentioned she was from Chicago. I mentioned you and your hot dog comments. She smiled and said JoJo's in Port Orange makes a good one here locally.

    I saw that there were the right ingredients on the dog and from the picture maybe a correct relish and sport peppers. Vienna Beef dog would make it perfect.

    A place in Cedar Key made correct dogs but I don't know if they are still around after the last hurricane.

    Many years ago a guy that was a former school bus driver from the Southside opened a hotdog stand just south of where Pizza Palace used to be on 13th Street. He made authentic Chicago dogs. And he made fries with freshly cut potatoes. I loved that place.
