    Today is our neighbor lady’s birthday so on her request our supper menu will be: bone-in country cut ribs grilled indirect over cherry wood smoke, a fresh pot of pinkeye peas w/snaps and pod okra, and Dixie Lily yellow rice covered with Rotel tomatoes.

    The Yeti is reloaded and Ms. Jan’s chilled wine is ready to go.

    Years ago I was at a huge conference with my thesis advisor at Cornell in the summer. It was so long that I flew my bike up there so I could ride. Nice bike riding up there. Climbed up Buffalo Street in a 42-19 gear. I was stronger and lighter then.

    One day there was going to be a whole hog pig roast at a frined of mine parents' house in Pennsylvania and I rode my bike down there. Really tough ride.

    That evening the father of my friend invited me and my thesis advisor to do some bass fishing on a private lake, but we had to catch and release.

    I caught two and my advisor caught none.

    He said "Well, we know that there are at least two bass in this lake."

    I said "No. there might be only only bass in this lake. I might have caught the same one once again."

    He really wasn't a fisherman so he really didn't get the dig.

    My four year apparently has a stomach bug. Losing it this morning…

    So the planned day is shot. Have to stay home. Time to pivot. What do we do???

    Crawfish boil!! Ran to HEB and picked up a bag. Throwing the sausages and mushrooms in too. Not doing the shrimp this time. Crawfish, baseball, beer. Basically everything I want life to be!!!!

    It's up to 40 degrees here in northern MN. Time to fire up the grill! I'll be smoking some ribs tomorrow with potatoes and kale and/or zucchini.

    This evening we’re going to do breakfast for supper. It’ll be fried beef cubed steak, grits, eggs and Ms. Jan’s homemade biscuits. Eggs will be your choice with Ms. Jan wanting scrambled and I will have mine over easy.

    We are on our last bottle of Pre-Michael Calhoun County Tupelo honey but we do enjoy it with Ms. Jan’s biscuits.

    Lazy afternoon/evening soaking up our Gators series win. Couple of bourbon drinks for me and chilled wine for Ms. Jan.

    After today's game I should be cooking some back bacon!

    Instead I will make caramelized cabbage with bread crumbs, sage and anchoivies over penne.

    Tonight it is pork chops, sauteed green beans and mashed potatoes.

    Over the next few day a nephew will be visiting, mostly to see his grandma. He is a former marine officer and water boy for the UVa football team so lots of meat on the menu. Tomorrow I am braising a corned beef brisket. In the next few days I will be smoking chickens for enchiladas and smoking three slabs of St Louis cut pork ribs rubbed Memphis style. Now I wish that I had a Kamado Joe Big III.

    Tonight I’ll be grilling chicken halves seasoned with coarse black pepper and Everglades Cactus Dust seasoning. And yes there will be Pat’s Homade applied on the last two turns.

    Inside we will have a fresh pot of petite butter beans and whole kernel sweet corn. There will also be a pot of white rice topped with Rotel tomatoes.

    Beautiful day here today-sunshine and blue skies-the back porch Yeti is restocked and Ms. Jan’s wine is chilled. It’s a great time to be on the back porch.

    Smoking two chickens this afternoon. One is for dinner tonight and the other is for chicken enchiladas later in the week.

    Smoking two chickens is the same work as smoking one, so why not smoke two?

    I know that you can cook chickens faster than a low and slow smoke, but they are just so juicy and tasty when cooked that way.

    Mashed potatoes and a salad to go along with it.

    Our yesterday’s supper was put off until tonight. Ms. Jan decided she was pizza hungry last night so Fat John’s it was.

    Beautiful day here today, slight breeze making it very nice outside. Ms. Jan’s been working with her plants off and on all day. I’ve got my zero turn serviced, new blades installed and ready for spring and summer grass cutting.

    The longnecks are ice cold and the chilled wine is ready to go.

    Chickens done about 30 minutes early. When I bought them at Publix the "young" whole chickens didn't look all that good so I bought the "Greenwise" organic chickens. They are a bit smaller because they are not pumped up with hormones. Probably why they cooked faster.

    They are now wrapped in foil.

    Even if they cool all the way down they will still be tasty so not a problem. Lucky that I checked early so that they didn't get overcooked and dried out.

    Getting gyros and stuffed grape leaves to eat while watching the Gators take on the Noles. My nephew's travel was delayed and won't get here until tomorrow.

    I never got around to posting our supper yesterday evening with the ball game going on, but—

    I took Mahi-mahi fillets, blackened them, and made po’boy sandwiches topped with freshly shredded lettuce and sliced vine ripe tomatoes. Their finishing touch was Joe Patti’s seafood cocktail sauce.

    We had sweet potato fries as our side. And yes, supper was the best part of our evening.

    Ribs are rubbed and the KJ is lit. I plan on putting them on around 2:00.

    Will be making vinegar slaw a bit later.

    Because we had company I put some tupelo honey on the ribs last night toward the end. They are better that way but I don't have that much left and I don't see a trip to Wee-Wa anytime soon.

    Tonight I am also cooking for company. I am cooking grouper with a macademia/panko/cilantro topping and yellow rice pilaf. My wife is making a salad and asperagus. A Gary Farrell and a Rochioli chardonney are chilling in the fridge.

    I’ve got a half boneless pork loin on the Egg seasoned with olive oil, coarse black pepper, Everglades seasoning, and Legg’s Plantation BBQ Rub.

    Inside we’re having pinkeye peas with snaps and pod okra, petite butter beans and sweet corn, and white rice topped with Rotel tomatoes.

    The longnecks are ice cold and the chilled wine is ready to go.
