    Pork chops, green beans almondine, and rice for dinner tonight.

    Thunder storming in Gainesville right now. I hope it all clears out so as not to delay the game in Deland tonight.

    Tonight’s supper will be as close to preferred ballpark fare as goes around here. Grilling wings with a cold tray.

    Late afternoon thunderstorm is expected through our area between 3:00pm-5:00pm.

    Backporch ice cold longnecks and chilled wine are ready to go for the afternoon and evening.

    Tonight I’ll be grilling bone-in country cut ribs indirect over cherry wood smoke.

    Our sides will be a fresh pot of green beans and new potatoes and bi-color cob corn. We will also have jalapeño cornbread on the side.

    Big mid-morning til mid-afternoon thunderstorm. Partly cloudy cover since. Ice cold longnecks and chilled wine are ready to go on the back porch.

    I am guessing that it will take about 4 hours on your BGE to cook the ribs, so were you out there in the thunderstorm lighting it?

    If so, that is dedication.

    My wife is slammed with work at her law office and said that she would be done at 8. Now it is might be might be home just after nine. No biggie. The seafood pho keeps.

    What are the dimensions, Bill?

    I just re-roofed mine after extending the existing concrete patio out 4' using deck boards and now have about 12' x 40' under Galvalume roof panels. No leaks either!

    12’ x 40’ is dang big Baz—

    Our back porch is completely covered and measures 16’ x 26’. It is a solid concrete slab.

    OK thanks, Bill! 16'x26' is quite large as well!

    In my case, I was dealing with only 8' of depth, until I added the additional 4'. That was a game changer to now have that additional "elbow room" while traveling the length.

    But yeah - nice and roomy all the way around.

    My wife loved the mahi we had a few days ago so much that she bought some mangos and diced them and asked me to make a mango salsa to have over mahi really soon.

    I got a fresh boneless chuck roast ground for hamburger steaks tonight on the grill. Baked potatoes will be on the top rack.

    Our other sides will be a fresh Romaine salad topped with vine ripe tomatoes and Ms. Jan’s yeast rolls.

    Beautiful day here today and the back porch Yeti is stocked with ice cold longnecks and chilled wine to lend its part to the tailGatoring for the ballgame tonight.

    Gorgeous day in Gainesville today, but going to a party tonight means no cooking for me.

    And tomorrow is a game we are attending so if I cook it will be really simple before the game.

    But my MIL bought some mahi for Sunday dinner and I will make a mango salsa to pair with it. Maybe asparagus as a side?

    Pregame meal today will be a choice of jambalaya or a reprise of the chicken with noodles from a few days ago.

    Tomorrow will be baked mahi without the macadamia and panko topping, but with a mango salsa topping instead. Probably asparagus as the veggie.

    Tonight we’re going with fried fresh catfish, Ms. Jan’s homemade coleslaw, cheese grits, and French fries. (We have Magnolia Grace this weekend and she likes fries over hush puppies).

    Beautiful day here today so back porch time is a must. Mags can play outside ‘til her heart’s content and the ice cold longnecks and chilled wine are again ready to go for the ballgame.

    Skinned the mahi, but no limes to marinade. But I have lemons. Not what I wanted, but the citrus acid is what is needed so it should be OK. Maybe not the best taste, but I think it will be OK.

    Will bake with some butter and no panko/macademia nut/cilantro topping like last time but will use the mango salsa instead after it is cooked.
