    And announcing that Pat's Ho-Made is back at my Publix! It is not the best BBQ sauce, but it is very good and really cheap.

    The All purpose--for us it loves chicken and pork, and I'll use it on grilled fish sometimes too.

    Found it at mine too. Looks like they have all the Everglades seasonings too even though the Everglades website didnt list them. Going to make a run up there tonight.

    Publix up here north of ATL had all the goods. Everglades (OG and hot), Pats, and the popper dip in the deli. If you have it down there and havent tried it I highly recommend. That and their spinach dip are 2 of my go tos for adding into different things.

    This evening it’ll be grilling cheeseburgers from a fresh ground boneless chuck roast, hotdogs, baked BBQ beans, and French fries seasoned with salt and Old Bay’s.

    Cut the yard again today behind the afternoon rains. A hot shower and “cool down” ice cold longnecks are equally pleasing.

    Making a meatloaf tonight with a twist: about one third of the meat will be Italian sausage (the other two thirds will be lean beef) and there will be reggio parmigiano cheese in the mix with garlic, oregano, and basil. And diced tomatoes instead of ketchup. An egg, some onion, and breadcrumbs, of course. Finely chopped red bell pepper, too.

    Just moving some things out of the freezer and frig. I think that it will work. I will also make a salad.

    Ahhh, the early morning smells of a large pot of spaghetti sauce coming together and filling the kitchen with it’s pleasing aromas.

    A fresh romaine salad topped with vine ripe tomatoes and Italian garlic bread will be our sides.

    Afternoon ice cold longnecks and Ms. Jan’s chilled wine will be go quite well before our evening meal.

    The meatloaf was great. I am going to keep this in mind for an awesome combination of ingredients. While it did not have ricotta, the reggio parmigiano cheese made it taste like a lasagna without pasta.

    Today I am making carnitas. I have already made some pico de gallo as well as a tomatillo/avocado guacamole as some of the available toppings. My wife loves the tomatillo/avocado guac and so do I.

    I use pork shoulder as the meat when I make carnitas, but there were no boneless pork shoulders at my Publix. I had to carve up a bone-in pork shoulder. Good thing that I keep my knives sharp as a lot of their connective tissue is really tough.

    Not exactly a "What's Cooking?" thing but related to eating. I have been randomly giving out $20 tips to folks that are manning eating establishments that have just recently re-opened that have a walk-up. I know that those folks have not been working for a long time and really need the money. I don't order anything. I just give them $20.

    The only takeout I’ve been to since March is Leonardo’s Millhopper, which has curbside pickup or one person only in the pickup area—with masks required. They get a tip @ $12.00 for 2 pizzas

    The day started early as I put a 9 lb butt on the Egg at 5:00am this morning over cherry wood smoke.

    Sides will be Ms. Jan’s homemade potato salad, deviled eggs, BBQ baked beans, and jalapeño cornbread. The girls have also baked a rum cake for folks who like desert.

    Heavy rainstorms are supposed to be moving in by 1:00pm but we are set up for that with the fully covered back porch—the refreshments will be enjoyed as we listen to the rain on the tin roof.

    Made the spice oil for when my wife seers some sea scallops. To be served over a bed of flat leaf parsley and cilantro.

    Also making the yellow rice pilaf to go with it.

    And it has been raining here all day.

    We like seared scallops with crispy seared leek (sliced lengthwise), lemon wedges and yellow rice. It’s on the menu for this week

    I know its not going to rival any of your guys dishes / meals - but I bet it will make you jealous. WE ALL ATE BALL PARK FOOD YESTERDAY!!!!! We had 3 games and it was hotter than hell. But Ive never been so happy to be sweating at a baseball field, and spend 30 dollars at the concessions stand. LOL

    Tonight we get treated again to Ms. Jan’s smothered fried country steak and gravy (yep, mushrooms and onions too)—

    Sides will be homemade mashed potatoes, fresh pink-eye peas with snaps, fresh pod okra, and fried cornbread.

    Between yesterday and last night we poured 5” of rain out of our gauge at daylight this morning.

    Back porch ice cold longnecks and the girls chilled wine will be in order again today.

    Tonight will be leftover rice pilaf, pickled shrimp and fennel, and roasted Brussels sprouts after we visit some friends for some socially distanced wine. Original plan to grill some chicken thighs with Pat's was scrapped until tomorrow.

    I must have gotten some tumeric on my left hand yesterday making the pilaf. Either that or I have a case of jaundice that only effects my left hand.

    Chicken thighs are on. Should be about 45 minutes, but the thermopen tells the truth. Two turns with Pat's Ho-Made.
    Rice pilaf is warming up. Almost done.

    Added in edit: the chicken thighs are done.

    Late post on my part as we were busy in the flower beds today.

    Ms. Jan has the 2nd half of the spaghetti sauce converted into baked Ziti pasta in the oven. We will have fresh Romaine salad topped with vine ripe tomatoes. Italian garlic bread to go with.

    Refreshments are enjoyed by all on the back porch.

    I got a lot of home grown heirloom tomatoes the other day so I made tomato sauce today. My plan was celery soup and tomato sauce over farfalle for dinner tonight, but my MIL wants to buy us Thai take-out.

    I can wait until tomorrow.
