    The middle of this afternoon I’ll have the Green Egg ready to go for rack Baby Back Ribs over applewood smoke—in the last hour I will add a pack of Hickory Hollow’s finest link smoked venison sausage, and fresh bi-color cob corn, just because—

    Other sides will be fresh steamed green cabbage, and fresh steamed yellow squash and vidalia onions—

    Ice cold longnecks will be assisting the cook—;)

    Just lit the Egg and made a drink. Gonna cook meat for the week. 8 lbs of chicken breast marinated in Italian dressing and seasoned with Bad Byrons / ranch dust, a full pork loin cut into thick chops seasoned the same as the chicken, couple pounds of venison sausage, and a bacon wrapped backstrap that I will be cooking secretly and hiding from these carnivores. LOL

    I hope everyone is making it as best they can. We have had some "high decibel conversations" so far but nobody has been shanked. LOL

    I self-quarantined on Galveston Island this week. Caught 6 black drum from shore and grilled them the last two nights.

    Used old bay, cayenne pepper and a thai green chili powder.

    Sides were mashed potatoes one night and potato wedges the other. Freshly cut in both cases.

    Got a crockpot of baked beans going and browning a corned beef to go into a low oven for about a seven hour braise.

    Tonight I’m grilling hamburger steaks from a fresh ground boneless chuck roast.

    We also have a pot of fresh green beans and new potatoes to go with.

    The Yeti is restocked and iced down with longnecks for the afternoon’s activities.

    Grilling wings over charcoal with some applewood smoke rolling through. Cold tray for the sides.

    The longnecks are ice cold, as usual....

    Sauteed rapini with sweet Italian sausage tonight.

    A bottle of sauvignon blanc is in the frig.

    I’ll be grilling chicken halves seasoned with coarse black pepper and Everglades seasoning. Pat’s Ho-made on the last two turns.

    Inside we’ve got a big pot of fresh green beans and new potatoes.

    Ice cold longnecks are just the ticket for a pleasant afternoon enjoying this beautiful weather behind yesterday’s thunderstorms.

    Did you need the rain as badly as us in Gainesville did? We had less than half an inch of rain year to date before getting a little over half an inch of much needed rain yesterday.

    Thawing enchiladas that we made a week ago for dinner tonight. Tomorrow I have to get up early to smoke two pork shoulders.

    Lurk—yes, it was very dry here. First rain we’ve had in 3-4 weeks.

    The last thing we need now is a bad wild fire season and if we don't get a lot more rain it will be bad.

    Last night was leftovers.

    Tonight I will be grilling two chickens. One is for tonight's dinner and the other is for making chicken enchiladas.

    The veggies we were going to have tonight were just warmed up okra. My wife owes me.

    I think that she will make it up tomorrow with the chicken enchiladas.

    Never got around to posting last night’s supper, my bad...

    We had grilled Steelhead Trout, baked sweet potatoes, and fresh Caesar salad. I seasoned the trout with coarse black pepper and Cavender’s Greek Seasoning and brushed it with real butter, squeezed lemon, crushed garlic and a lil’ olive oil.

    The ice cold longnecks were top shelf for sure.

    Tonight Ms. Jan is taking a turn on supper. It’ll be smother-fried cubed steak cooked down in gravy laced with shaved vidalia onions, chopped up fresh bell pepper and sliced up mushrooms.

    A pot of rice to go with along with green beans and fresh yellow squash and vidalia onions.

    The back porch Yeti is restocked, re-iced, and ready to go.

    Ms. Jan’s supper was really good last night. As we were cleaning up the kitchen she let me know what she was thinking about for supper tonight.

    I’ll be frying fresh catfish fillets this evening. (I like to season them with a lil’ salt, black pepper and Old Bay’s seasoning). We will have cheese grits, hush puppies and a fresh tossed salad topped with vine ripe tomatoes.

    Ice cold longnecks go mighty good with fried fish I’m told so we’ll be checking that out this afternoon.;)
