I can assure you that companies creating these contracts are smart enough to construct them so that they are both legal and restrictive.
They aren’t allowed to require them to attend a specific school or to actually play. They can’t be contingent on on-field performance. My guess is they are location based. For UF athletes, I would imagine they require they live within so many miles of Gainesville in order to fulfill their obligations. If they move out of the area, they break their contract.

Some of this stuff is state law, so it's more than just what the NCAA is enforcing. Either way, it wouldn't make much sense to put things that are in direct violation of the rules and laws in writing.
