I know how they make it, and think it’s gross. But it’s leftover parts and seasonings……….which is all most sausage is. Some people put in a large casing like a bologna. Most just let it cool in a deep pan. Some recipes even call it hog head sausage. There are other sausages that are similar weird gelatinous consistencies.

 

Well you left out the part about boiling the head and skimming off all the stuff that floats to the top — but I suppose we’re done with the hog head cheese discussion. So, back to mudfish and gopher turtles……unless of course anybody has anything to share on Austin Simmons - or his brother Hunter
