Outside the dugout: What's cooking?

    All of our family will be together today to celebrate Easter Sunday.

    I have smoked a whole ham for our meal together. In addition we are having Ms. Jan’s homemade chicken’n’dumplings, Mac&Cheese, fresh zipper peas, sweet potato casserole, Watergate salad, and freshly made yeast rolls.

    For desserts Ms. Jan has made her banana pudding and Ms. Abbey has baked one of her cakes. She can bake’em all, I don’t know what today’s treat will be.

    A variety of wines, bourbons, and col’beers will be available.

    Life is good in Gator Nation!

    Chicken piccata tonight with a side of linguini with black olives and caprese salad. Paired with a New Zealand sauvignon blanc.

    Tonight we’re having the last of some very good leftover chicken’n’dumplings from Easter. Fried cornbread will be on the side.

    We’ve had a rain day here today until about 3:00pm. Soon as the rain let up the skeeters said “Tally Ho”…

    Ice cold longnecks and chilled wine are available this evening.

    Last night was a cluster with the 6:00 game, my wife having PT for her rotator cuff rehab finishing about first pitch and my son having a doctor's appointment that ended around 5 on the other side of town. Mix that in with my MIL not wanting to attend anymore (she's 92 and the stairs are a problem) and try as we might we can't train her to get the games on ESPN+ on our TV. We have even tried talking her through it via phone but has never worked.

    So I warmed up the vinegar chicken leftovers and mixed it with linguini for my MIL and myself. Surprising great. My son went straight to the game. My wife had an early dinner before PT and came home to pick me up. I got the game started for my MIL on ESPN+ and then off to the game. Missed the first two innings.

    I made victory margaritas after the game.

    Tonight I needed to use up some tomatoes and corn so skillet corn with scallions and diced tomatoes. We call it corn and tomato scramble. Grilling chicken legs on the KJ (I prefer chicken thighs but not enough bone-in and skin on chicken thighs at my Publix) and preparing green beans in some manner.

    Tonight is the last night my youngest is in town before a three week vacation in Amsterdam and Denmark. So I am making him one of his favorite dinners: grilled NY Strip Steak, oven baked russet potatoes and some version of broccoli that my wife will make. Maybe roasted in the oven after the potatoes are done or stir fried would be my guesses. It is all good.

    I keep telling him that I would love to go to that part of teh world around this time of year to see some of the cycling monuments. Paris-Roubaix and Tour of Flanders (I won't call it the Ronde here because almost nobody would get it) especially but they were a few weeks ago. I think he wants to go there without his dad in tow. LOL.

    Started my day at one of my storage units working on one of my motorcycles. Things didn't quite go as planned so I let it go until I could return with more time and some things I needed. On to Winn Dixie to grab some provisions before heading home for a bike ride. And then work this afternoon.

    Wanted some baked beans from the deli so as I was heading there there was an elderly woman looking things over. I said "See anything you like?" She looked at me and replied "I didn't see what I was looking for." I asked "What was that?" She replied "Southern Style Potato Salad in the small size." I took a look and there it was....so I handed it to her and you should have seen her face light up!

    Made my day.....:)

    It is a little difficult these days finding things the way they design certain labels. Common sense seems to give way to artistic expression, it seems!

    No cooking here tonight. Ms. Jan and I both have tested positive for Flu A. I didn’t know that they’re assigning letters to it now.

    It’s without a doubt the worst strain of flu I’ve ever experienced.
    Three days so far of the worst headache I’ve ever encountered.
    Freezing chills, terrible cough, and dizziness. Not fun for sure. I wouldn’t wish this on somebody I didn’t like.

    Don’t know if I can make the whole ballgame or not.

    Opened up the pool & patio this week. Weather turned earlier this year. So celebrated by smoking a couple racks of spare ribs last night. I usually go baby backs but couldn’t find any. The meat came out great. I know competition ribs should have some tug on the meat but I prefer “fall off the bone”. There was an extra line of bone in there which was weird. But again, meat was tasty.

    Made potato salad, baked beans and pickled cucumbers & onions.
