Pork picnic roast on sale at Publix today @ $1.50/lb. Picked up a half roast, right about 3.75lb. Kinder's cherry chipotle rub, half a white onion, two smashed garlic cloves, 1 cup of water. High pressure in the instant pot for 75min. Remove bone, shred, sheet pan under the broiler for 12 minutes. Perfect for tacos, burritos, nachos, etc. Excellent on a bun with slaw. Go Gators!
Pulled out my old cylinder smoker (Cajun Cooker style) today. I’ll be smoking a standing pork rib roast. Seasoned with coarse black pepper and original Everglades seasoning. My water pan will be half water and half apple juice as I am using apple chunks for my wood smoke. Our sides will be a pot of fresh green beans and new potatoes and I will lay some fresh bi-color cob corn in the smoker when it’s time. A good meal in celebration of our Gators getting it done with the sweep of Mizzou. Ice cold longnecks and chilled wine are available as desired. Life is good in Gator Nation!
I’ve done a few in my infrared turkey fryer. I did not think it would work as well as it does. Only two things I use that thing for, turkeys and rib roasts. It does a phenomenal job with both.
Made hot and sour soup last night. It needs some ingredients you have to get at an Asian market like wood ear mushrooms and 5 spiced dried tofu. Worth the trouble. Tonight I am making vinegar chicken to serve over rice.
Clam chowder for lunch....Snow's condensed from a can. Diluted with half & half and seasoned with black pepper and pink salt.....yum!!!
Tonight we are having spaghetti for supper. We will also have a freshly made Romaine salad topped with vine ripe tomatoes. Toasted garlic bread will be on the table as well. The pot of spaghetti sauce is filling the house with its appealing aroma. Ice cold longnecks and chilled wine will be available. Life is good in Gator Nation!
Needed a quick dinner before the game. Used two frozen pizzas we bought a while ago when we had visitors for a while.
Same experience here. When one calls I say they call them spring breakers for nothing. I post that I rent to no one under 25 years old.
Loaded BBQ pork tots tonight. Air fried tater tots (extra, extra crispy), put back under the broiler for a few minutes with the pulled pork I made this weekend, jalapeños, and colby jack cheese. Once melted, topped with scallions, cilantro, and Greek yogurt (which I prefer to sour cream). Valentina hot sauce on top. Simple salad of iceberg lettuce, chopped fresh tomatoes, and lemon juice on the side. Is it authentic? No. Is it healthy? No. Is it GD delicious? YES
Since it is Good Friday I decided to make fish tacos with fresh north Atlantic cod because my fish monger was out of mahi-mahi. Somehow I don't think this is any kind of sacrifice. LOL. And a side of cilantro/lime rice ala Chipotle. It is really easy to make. It is rice with cilantro and lime juice. LOL.
I failed to post this earlier. We’re having grilled cheeseburgers and Lay’s lightly salted ruffle chips tonight. Ms. Jan’s staying with her chilled wine and I’m enjoying a tumbler or two of Elijah Craig. Life is good in Gator Nation!
I didn't know that my 29 year old son wasn't going to eat with us last night so I have a lot of cod left over for fish tacos. I saved the liquid for cooking it to cook what is left. It should be even better than last night. But also making a ground pork and green beans dish with ginger and red chilies to serve over rice.
Truth be told the MSU starter was fantastic. And then his replacement gave up six straight hits leading to a 7 run inning IIRC and it was over. I felt bad for the MSU starter but I got over it.
