Outside the dugout: What's cooking?

    We have heard of people going to a Chinese restaurant for Christmas dinner. We were tired of cooking and went to Mr Han’s in Gainesville. We ordered a second of each dish to take home. I don’t think we will ever cook Xmas at home again

    Mr Han's is very good. I miss going there with my Chinese colleague that would order off menu and get GREAT stuff. He appreciated that I would always try anything.

    Today I am smoking a pork shoulder for pulled pork sandwiches. Going to make the Carolina slaw soon.

    Put a 4.4 lb pork shoulder on the KJ at 250 F just after noon. Temps have bounced between 240 F and 270 F all day. 5:15 and it still looks like it is in early plateau stage so I am ramping up the temps. I am sure that it has enough smoke. Cook quicker but rest longer has worked in the past.

    Not a fan of wrapping at this point. I like the bark.

    Slaw is made.

    BTW buying two packages of Ball Park hamburger buns for a total of 16 was almost as expensive as the pork shoulder at $1.99 per pound. Not shown on sale at my Publix but it is the usual sale price. Missed out on the pre-Christmas beef rib roast sale at $7.99 per pound and good cuts and not just the ends.

    We all are closing the kitchen and taking the night off from meal prep. We are meeting at Ably’s Chinese Restaurant and everyone will have their own choice there.

    It’s really nice to be with family during the holidays after so many years of being scattered.

    Life is good in Gator Nation!
