    Rinsed with cold water. Dried off with paper towels. Seasoned with salt and pepper. Sauteed in butter with fry pan. And that's it.

    Felt healthy eating fish as a protein source. Going to try and do more this year....

    Have to also say...dollar for dollar, I'll take Cod over Haddock any day.

    Forgot to mention - I lightly sprinkled a little Old Bay on my cod tonight and think it helped.

    I usually use coarse black pepper, Everglades original seasoning, and dust them with Old Bay’s—works every time!

    Smoking two chicken today. Making lemony potato salad as a side. Also a green salad.

    Grilling wings with a cold tray today. Soak’em in cold water for an hour first, season with coarse black pepper and Everglades seasoning and then on the grill.

    The cold tray will be celery, green bell pepper, cauliflower, grape tomatoes, and baby carrots.

    Ice cold longnecks and chilled wine are our choices today.

    Tonight we’re picking up Johnny’s pizza and cheese bread to go along with ice cold longnecks and chilled wine for the ballgame.

    Monday was leftovers. Yesterday was caramelized cabbage with breadcrumbs, sage and anchovies and penne. Today will be potatoes with peppers and sausage.

    Fish tacos tonight. Speck filets, dredged in seasoned flour/cornmeal mix and pan fried. On flour tortillas with shredded cabbage, chopped cilantro and spicy sauce (Cholula + lime juice + mayo).

    Refried beans and rice on the side, chips and salsa with margaritas for an appetizer.

    Did you catch those specks fresh? If so OMG good.

    Usually I use cod or tilapia for fish tacos because it is cheap and the fish is not the main attraction. I have made fish tacos with mahi-mahi but then I tone down the toppings so that the fish flavor shines through.

    Caught em at the stick marsh. It's great for tacos. I agree you don't want something too expensive or strongly flavored.

    I LOVE tilapia but only wild caught. The farmed stuff tastes like a totally different (worse) fish to me.

    Pre-Sweet 16 game meal with friends over. Making two different Thai curries. One is a red curry and hot and the other is massaman and mild but very rich. Both with chicken breast as the protein. My wife asked why not chicken things (my "go to" chicken meat for most dishes) and I said that the coconut milk is fatty enough that the dish doesn't need the extra chicken fat. Also made a cucumber salad but without peanuts because one guest has a peanut allergy. Using black sesame seeds instead.

    Tonight we’re having our beef taco casserole. Toppings will be Sargento Tex-Mex shredded cheese, sliced fresh jalapeños, and sour cream. Tostitos whole grain scoops on the side.

    Ice cold longnecks and chilled wine are available.

    New one for me today. About 2 weeks ago I had my lower left furthest back molar extracted. It started out a year ago as a root canal. My first ever. What (I guess) no one knew is that tooth was fractured. So for the past year.....I've had this uneasy feeling on that tooth - at times a bit painful, but mostly something just didn't feel right.

    Things came to a head 2 weeks ago when I had finally had enough and had my dentist do the extraction. This, after they figured out it was fractured.

    OK whatever. At 70 years of age, losing one of your teeth isn't the end of the world, considering what others have gone through at this age!

    The problem is.....after a couple days I couldn't open my mouth as far as normal without pain on that left side.

    Turns out, according to my dentist today, I have a condition called "Trismus".

    Supposed to go away after a short period of time - but meanwhile I'm taking Tramadol and am on soft food diet (again).

    Our win over Maryland tonight makes things better though. And I have a nice Bone-in Pork Butt to make BBQ pulled pork with as soon as my jaw gets back to normal! :)

    Smoking two slabs of ribs, made Carolina slaw, bought some baked beans from Sonny's. My wife also made a veggie Thai curry because one person is a vegetarian.

    Late addition to the guest list. At the last minute some friends asked if her mother can join us. Was not in the plans. I think pita bread was named after her.
