    Take out from Popeye's tonight. The Family Festive Box. :)

    My latest interest is Rice and Beans.

    How do you guys do yours?

    I picked up some red beans and was going to try those with some jasmine rice. :ninja:

    The red beans and rice are plenty good-the black beans and rice have a little more flavor or zing to them to us.

    Well....I think I got it figured out. Emphasis placed more on the bean preparation than the rice. Beans are cooked with additional ingredients like onions, celery, green pepper, water, and spices.

    I will be adding some sausage too - for one variation.

    Rice is just cooked as normal.

    Serve with cornbread.

    And Bob's your uncle! ;)

    We’ve got a new family owned Cajun restaurant in town. Its name is The Cajun Menu. We are trying it out tonight.

    The only complaint we have heard is when they are busy they can run out of menu items. We have not heard anything negative about the food itself.

    I have to say....I'm not all that impressed with that Jasmine Rice.

    Give me Basmati all day long over Jasmine......:ninja:

    Tonight we’re having Chicken Alfredo with fresh broccoli tops included in the mix.

    Garlic bread sticks will be on the side.

    Pure T cold here-currently 27*/feels like 15*….low tonight expected of 23*.

    My fried cornbread recipe:
    2 cups fine sifted corn meal
    2/3 cup self rising flour
    1 tsp salt
    2 1/2 cups water

    Mix well-spoon or hand patty into cooking oil.
    If using spoon have a glass of water there to rinse/clean your spoon about every third piece of unfried cornbread.

    I like mine with chopped up chicken livers and gizzards. IIRC you can get it that way at Popeye's. At least many years ago.

    Tonight it’s comfort food our style. I’m grilling cheeseburgers with homemade French fries.

    Our high today was 33*. Normally I like ice cold longnecks when I’m grilling burgers but tonight I will be sipping on a tumbler of some Knob Creek.

    Did some outside work today - but waited until Noon for it to warm up a bit. Well...it didn't exactly warm up but was warmer than earlier. 50's, so not bad. I actually wore a l/s tee and sweats.

    One of my clients gave me some black-eyed peas and collards she made - and a big piece of cornbread. The cornbread didn't last long.....the other is still frozen.

    Old El Paso Chicken Tortilla Soup for dinner......yum!!!
