    Beautiful day here. We are having 8 oz filets with a Gorgonzola cream sauce, loaded baked potatoes, grilled asparagus and salad. The filets are out and getting to room temp. I’ll fire up the egg an about an hour.

    Normally would go with a choice red with steak. But I’m holding off due to the 7pm game start, when IPAs will start flowing.

    Pork chops on the KJ, stir fried green beans and mashed potatoes.

    Our friend from east of Tampa went home last night. Power was on, no flooding, no damage. Bullet dodged.

    Football Saturday ice cold longnecks and chilled wine are available.

    I will start out watching the Gators at UT football game but I am guessing I will switch the the Lady Gators playing volleyball before too long.

    Oops. I meant to say the Panthers/Sabres hockey game. The football game was surprisingly close.

    Chili tonight. The traditional beef kind. Made a big batch. We have a chili cook off at work this week. Feel pretty good how it turned out

    Tonight we’re having fried cubed pork steaks, steamed green cabbage, and yellow corn with red peppers.

    We had a low of 41* and a high of 62* today.

    A tumbler of Knob Creek small batch 100* will work tonight. Ms. Jan is sticking with her chilled wine.

    Comfort food!

    I am grilling fajitas tonight made from skirt steak that was on sale. Inside and not outside but perfectly fine for fajitas.

    This used to be a cheap cut, like flank steak that can also make decent fajitas. Skirt steak is better, though.

    Mexican take out for me today.

    My last destination before heading home for the day was down by one of our popular Mexican restaurants...Mi Mexico.

    So I had pre-planned in my head to grab some tacos so I wouldn't have to cook tonight. I went in and asked if they had a Taco Tuesday special. He replied..."Not for take out - only dine in." So I said "OK I guess I'll have some of those take out Tacos."

    He laughed so I added a beef burrito. They were good Tacos. End of story. :)

    Beans in this one, Lurk. Sorry to disappoint. But in “traditional” beef chili, I go with beans. Usually, half red beans & half pinto. Soak for 3-4 hours …then do the bean dump last hour. Perfect density & texture. I don’t do Kidney. Was never a fan. The casing on that bean is just too coarse for my taste.

    However, if you go for the real deal, Texas chili (or bowl of red) it’s prime chuck cut into 1’ cubes and simmers in a pepper paste, a little bit of beer, beef stock, a pinch of unsweetened cocoa powder, onions and a few other items for a few hours. Good stuff.

    Tonight is a Thai red curry with chicken. Veggies in the curry are yellow bell pepper, water chestnuts, carrots and Thai eggplant. For some reason bamboo shoots are hard to find.

    Also an Asian cucumber salad with peanuts that I like.

    I prefer chili with game meat like venison or elk. Even goat (cabrito) makes a great chili.

    My mom used to make chili with what were then cheap cuts of beef and stretched the protein content with beans. A product of the Great Depression. I get that.

    My wife is from Cincinnati and thinks that the Greeks that run Skyline make chili. Yuck.
