My wife is watching some friends kids while they have a weekend away. Last night we ordered out pizza and today I grilled some flank steak on the KJ for fajitas.
Tonight we’re being treated at Kayla’s house to chicken alfredo with broccoli tops. Baked garlic bread will be on the side. A nice Cav will be on the table to accompany the meal. Life is good in Gator Nation!
Today we had jambalaya with chicken and sausage that we made last night to eat just before going to the game.
10.5 lbs pork shoulder is off the egg and wrapped. Making potato salad, Carolina slaw and baked beans for sides. We are watching our grandson later this afternoon so no beer or cocktails this evening.
Tonight we’re going to have the crunchy taco beef casserole topped with Sargento Tex-Mex shredded cheese. This afternoon we’ll have a couple of ice cold longnecks watching the preliminary games but for our game it’ll be a tumbler of Knob Creek small batch 100* or two…… Life is good in Gator Nation!
32 oz chicken broth, 3 cups of water, 1/3 stick of butter, 2 tablespoons of olive oil, 3 stalks of celery cut into pieces, 1/2 a sweet onion cut into pieces, black pepper, thyme, rosemary, basil, sage, celery salt, lemon pepper, cayenne, garlic & pepper salt, Old Bay seasoning, Everglades seasoning, dash of ghost pepper salt, 1/2 of a Sam's roaster chicken cut into small pieces, 10 oz already cooked turkey breast cut into small pieces, 1 lb, breakfast sausage, cooked in skillet and chopped up into small pieces when done, 3 cups jasmine rice. In a large pot, add all the seasonings, celery and onion, bring to a boil and let boil until celery and onion pieces are soft, then add the rice and stir slowly for 3 minutes, making sure water is still boiling, then add the meat and stir for another 2-3 minutes. Turn stove down to low and put lid on the pot. Let simmer for an hour or so, then enjoy.
Today I’ll be grilling wings with a cold tray on the side. The longnecks are iced down and ready to go. Life is good in Gator Nation!
Sunday evening we're eating that leftover chicken, turkey, sausage & rice. I'm adding a little bit of Aardvark Habanero sauce to mine!!
Tonight Ms. Jan is Chinese hungry so we will pick up our supper from Ably’s Chinese Restaurant. Moscow Mules and Kentucky Mules are the choice for the evening. Life is good in Gator Nation!
This morning over coffee, Mrs. GT350 asked for low country boil for Saturday night...just for two of us. Ok. Get only beer boiling (I dont use water), add red potatoes, andouille sausage, onion, corn, and last jumbo shrimp in a bath of simmering beer with Old Bay and Veronica Taylor's New Orleans spice. The Old Bay with VT will be an experiment on my part. In past with many people, it's always been the big outdoor pot on the propane. Then one time last year my wife had an idea for 2 couples. Let's do low country and have people custom their own pot (I may have posted this before, cant recall). I bought new paint cans at Ace Hardware, cleaned them good, wrote out instructions next to all the ingredients and had each do their own. Some heavy on sausage, others heavy on corn. Served with jacked up corn bread from cast iron skillet on grill and plenty of butter. The key to me is to use beer, not water. Which side tracks me to margaritas....with some beer in it. !!
Low Country Boil = Yum! Door County Fish Boil = Uck! Nothing wrong with throwing some crawdads into the boil but more of a Louisiana thing instead of a South Carolina thing.
