We’re going to be at Alan’s house for supper this evening.

He’s grilling bone-in ribeyes with twice baked potatoes and Caesar salad.

Adult beverages are available with choices available as desired.

Way better than what we are having.

Do you do a reverse sear with a Big Green Egg? I am assuming Alan has one.

Kind of thought that was the way to go with a Big Green Egg.

My KJ it came with split deflectors and split grills so that I can set it up with one grill down low near the coals and the other up high with a ceramic deflector. It allows me to first sear and then finish much cooler and indirect but I can only do that with a few steaks because I need half of the cooking surface for each step. For a bigger dinner party I would have to go the reverse sear route. Or get a second KJ, LOL.

I prefer the sear first route especially if the steak is on the lean side. That is rarely a problem with a good ribeye.

Meatball subs for tonight topped with sautéed onions and provolone. Son will be coming over for dinner and the game. It was his request.

My wife is having a salad and the leftover Italian sausage from the pot of sauce I made the other night. I have to have the rendered sausage juice in my sauce …but I can’t eat the sausage itself. The fennel seeds just never agreed with me.

I bet he won’t smother that steak with some boujee cream sauce. :D:p

Ribeye, twice baked’s, and a caesar…that might be my favorite meal.

I sometimes make a cream cheese, shallot and serrano chile topping on ribeyes. It is really good.

But a naked ribeye is also great. Not actually naked but with a little salt and pepper well before grilling. Occasionally I might put a bit of sugar on it for caramelization

I don't only grill ribeyes one way. There are lots of ways to do it. They are all great.

Tonight Ms. Jan’s making her pot roast and gravy with vidalia onions, celery hearts, fresh garlic cloves, Yukon gold potatoes, and carrots.

Fried cornbread will be on the side.

Tumblers of Jefferson Reserve Single Barrel 100 proof for Alan and myself and Ms. Jan’s choice is the Moscow Mule.

Cuban pulled pork tacos tonight …with homemade pico, pickled onions & jalapeños. Black beans & rice on the side. And, not be outdone the wife is having a salad.

My daughter, son and his girlfriend friend will be over to join us. So probably will have a buffet of toppings set up, along with chips, salsa & guacamole.

With all the excitement yesterday after that late innings pounding of Auburn, I forgot about last night…

Getting warmer, so I fired up the Egg. Had my first Ribeye (bone in) of the year. A loaded baked potato with tossed salad on the side. Shockingly, my wife had the same …minus the loaded part of the baked potato.

Today is our travel day back home to Marianna so I’m sure pick up is going to be the best choice for our supper—Ms. Jan’s usually got the lead on choice.

I’m sure a post trip adult beverage will be in order.
