sorry … a bit of a rough day and didn’t feel like typing. But there is a standard on this thread that must be upheld. Sirloin chopped, seasoned and seared & veggie soup, with carrots, celery, onions, green beans and corn. No grilled cheese this time around. Just went with saltines and called it a night.
Tonight, taco salad …the old El Paso kind. I’m ok with it. Something comforting about it since I was a kid …and has been kind of a “go to” meal, once or twice a month, since I’ve gotten older.
The Taco Bean Soup was good enough last night that with the wet weather moving in everyone has requested a do-over, so leftovers it is. Everyone is requesting Mules for the evening so Moscow and Kentucky are available. Life is good in Gator Nation!
I have given @74nole all kinds of "stuff" about boneless ribs. If there isn't a bone, how is it a rib? All in good fun.
4.25 pounds and over seven hours and not quite ready at 250 F. But I think it is over the plateau and so might not be that much longer.
Tonight I’ll be grilling one of @GatorLurker’s favorite—bone-in country cut ribs indirect over cherry wood smoke and seasoned with coarse black pepper and Everglades seasoning. Inside we’ll have Ms. Jan’s homemade Mac’n’Cheese and a pot of fresh cream 40’s & petite butter beans. Freshly made yeast rolls will be on the side. The back porch is open and fully stocked. We have some of our best friends here for the evening as well as an overnight stay. Life is good in Gator Nation!
Parmesan, pesto and cheese tortellini tonight. Roasted asparagus and tossed salad on the side. I’ve never made this before …and wondering why not. Inexpensive and easy to make. Really good.
We were going to have pulled pork sandwiches with the leftover pulled pork and Carolina slaw, but my MIL wanted Thai take-out. I am not complaining.
Leftover stuffed shells last night for me. In Russia, you don't stuff the shells....they stuff you! I must be in Russia then because I'm stuffed!
I fired up the Egg on Monday. First time since before the holidays. It was single digit & below zero temps over the weekend… so being in the 40s on Monday felt like spring. Grilled up some burgers for myself and four 1” thick bone in pork chops for my wife to have along side her salads this week. Felt good to have grilled food again. For tonight, I’m making broccoli & cheese soup and a tossed salad.
Tonight we are having the Thai take-out that we wanted last night. My son really likes my carrot bisque so I am thinking about making it sometime soon. Weird that he likes it given all the things he won't eat, but it is really good. We first had it at the Island Hotel resteraunt in Cedar Key and I recreated it at home. Then I found a recipe on line that is almost a perfect replication so I just look it up and make tiny tweaks to it.
Tonight is pasta with cream, sundried tomatoes, roasted red peppers, shrimp and the usual things like garlic and basil. Also a salad with escarole, curly endive and radicchio. The new checkout girl had to ask me what each one was.
Tonight, it’s breakfast for dinner. For me anyway. Sausage, scrambled eggs w/spinach, hash browns and an English muffin. My wife is sticking with a salad and the last pork chop, I grilled the other night. And she ate the last of the broccoli cheese soup from last night.
I hate it when that happens. It’s one of my top 3 pet peeves… * No courtesy wave from the driver you just let through, in front of you. * People that don’t clean up their grass clippings that are sprayed all over the sidewalk & the street * A menu change at the last minute. If we have already discussed it and I have cheeseburger on the brain all day …and it’s all of a sudden chicken tenders for dinner at the last minute. Not good. Screws up my universe. Though, it doesn’t appear to be anyone’s fault, in your case. Still I hate it. But there are very few back up options to pulled pork sandwiches.
Tonight I’ll be grilling wings seasoned with coarse black pepper and Everglades Cactus Dust. Our sides will be a cold tray. The back porch is open and ready for your relaxation. Adult beverages are available as desired. Life is good in Gator Nation!
