Making pork chops & brown rice casserole for tonight, with green beans and salad on the side. Also, made a new batch of Michigan dog sauce today as well. Wanted to get it out of the way before tomorrow. My wife usually does a deep clean in the kitchen on Saturday mornings and gives me dirty looks if I go in there screwing around with stuff. Having dogs for tomorrow with Carolina firecracker slaw …and freezing the rest of the sauce in jars for later use.
Going to start the KJ soon for BBQ chicken thighs. My wife bought nearly eights pounds of them so there will lots left over for things like jambalaya in the near future. Making Spanish rice with a can of Rotel and chopped salad with kale as sides.
Tonight I will marinade a pork tenderloin in a sesame teriyaki sauce and then roast until pink. I have prepped a lot of veggies (baby bok choy, snow peas, shiitake mushrooms, scallions) for my wife to stir fry.
Alan and Abbey are making homemade chicken tortilla soup for tonight’s supper. Meds are in the rear view-choice of adult libations are on hand. Life is good in Gator Nation!
Made beef enchiladas for tonight …and I’m ashamed to say, that I’m not ashamed that I took the Old El Paso route . I did make some pico de gallo as a side, with refried beans as well.
After the fat ass food this weekend of Michigan dogs & enchiladas I’m feeling a little gross. So going with breakfast for dinner, tonight. Bacon, eggs scrambled with spinach & onions, and an English muffin. Not that it’s healthy, but not something that hangs in your gut making the rest of the evening uncomfortable.
Tonight is clam linguini. I also bought everything for making skirt steak with pesto, French green beans and corn on Thursday night. Just have to thaw some pesto that I made when I last harvested basil.
Tonight our first cooked supper back home is going to be an old time favorite for cooler weather-I am putting together a pot of old fashioned hamburger goulash. Sides will be freshly steamed green cabbage and cornbread. The back porch col’beers are stocked and Ms. Jan’s wine is chilled. Life is good in Gator Nation!
Low key tonight. Having an egg salad sandwich, with chips & pickle. I did make some homemade salsa earlier, so may skip on the kettle chips and just have tortilla chips with salsa on the side.
Sticking with the sandwich theme again tonight… going with cheese steak. The non Philly kind. Shaved ribeyes, onions and provolone. Hand cut French fries on the side.
The old fashioned goulash turned out good enough that it’s gonna be a do-over night here. Still low 50’s/windy/rain so perfect weather for it. Adult beverages are available on the back porch as desired. Life is good in Gator Nation!
Tonight I’m grilling chicken halves with baked potatoes on the top rack. Inside we’ve got a pot of fresh zipper peas. Choice of libations is the call for the back porch. Life is good in Gator Nation!

Tonight we’ve got some special friends from Alan’s HS classmates that are home from multiple deployments— They have requested my Franklin’s Beef Plate Ribs (the BGE is rolling) with baked potatoes and fresh Caesar salad. The back porch Yeti is fully stocked and Ms. Jan’s wine is chilled. They have also requested Hank Williams, Jr., and Waylon & Willie— We can handle that—a good time is expected for all! Red clam sauce over linguine, with tossed salad and just opened a bottle of Merlot. I had a sandwich for lunch earlier so skipping the garlic bread.
