One thing I really like about the Kamado Joe is being able to have one side as a grill low and the otherside as a grill high that is indirect. They call it "divide and conquer" but it is just setting up two sides differently. That is perfect for grilling the jerk chicken where I want to sear it and then cook at a lower temp. It is also great for searing steaks and then finishing more slowly.
Have a crockpot of creamy Tuscan chicken soup going for tonight. Chicken thighs, with artichoke hearts, sun dried tomatoes, onions & garlic …and I’ll add some heavy cream and spinach near the end. Also, picked up a loaf of French bread this morning …and I’ll throw together a tossed salad as a side. Go Gators! Beat Mizz
Oh yeah-my white blood cell count is now 11 (with normal being 8-12) so things are moving in the right direction but the cough is still persistent. Headache has eased up greatly.
Went to a friend's house for homemade grilled pizza and his birthday. We brought some leftover jerk chicken for a pizza topping and it was the first time he tasted what I make. He is now a HUGE fan. We both like tequila so we got him a bottle of Casamigos blanco. It is a decent sipping tequila. I think it is on the same level as Don Julio blanco, Don Julio 70 or Casa Dragones blanco and a step up from Patron blanco. To get much better would be pricey.
Your improvement is good to hear, Bill. Especially the headache part. I don't get them often, but when I do....ugh! BC powders are my usual remedy. Happy Sunday!
I have a pot of Sunday Sauce simmering with meatballs & sausage. Coming up on the 3rd hour. Should be good to go in another hour to hour & half. We’ll serve over thin spaghetti, with garlic bread and tossed salad on the side. Also, a decent bottle of Merlot to pair along with it.
Tonight is a Thai red curry with chicken and assorted veggies. I think my wife threw out my fish sauce so it won't have any.
Making pizza for tonight. Split down the middle between pepperoni & meatballs, with onions and black olives. A wedge salad on the side. No wine to go along with it. I’ll stick with iced tea or water.
One of Alan’s good friends is bringing us a pot of their homemade chicken-vegetable soup for our supper tonight. It’s greatly appreciated. Life has got a bandaid on it and getting better at Gator Nation!
Tonight we’ll be having Alby’s Oriental take out—I’ve got two more days of antibiotics and steroid meds. I’ll be soooo glad to have them and their aftermath in the rear view mirror. Looking forward for the strength to make the trip home. Life is good in Gator Nation!
Some crappy weather up my way. Started snowing this morning …then turned to rain… now it’s freezing rain. And it’s supposed to snow all day tomorrow. Fun times. Seems like a good soup night. So defrosting some veg/beef soup I made a few weeks back and have some left over garlic bread from the other night. I might call an audible last minute and add a grilled cheese.
