    Yeah, I've never heard anyone describe a nice slab of blackened sea bass with a perfect lemon cream sauce as being arrogantly delicious.

    The term Sea Bass itself is ignorant. But, ironically that coined term is what made a very tasty fish finally become popular.

    Yeah, I had a wonderful serving at a little place in Pensacola that was served with one of the best cream sauces I have ever tasted. Two years later I still remember it as being really exceptional. Incidentally, for the benefit of both myself, and all the other ignoramuses who may be reading this, if it's not actually sea bass what the hell is it?

    Patagonian Toothfish. I saw a show once that detailed the issue. Basically, this fishmonger changed the name to get it to sell and it took off. In the 70's as I recall.

    The Southern Pearl, just outside the city limits in Pace. Alas, it is no more; a victim of the covid era I suppose. It was a real shame to lose it, the food was far and away the best in our neck of the woods. All of their seafood and southern cuisine was just about as good as it gets. The wife and I remember it fondly.
