Tonight it’s leftovers here. Chicken’n’dumplings and zipper peas. The yard is cut and the “cool down” col’beers are smooth! Life is good in Gator Nation!
Grill is set up with one grate close to the very hot coals and the other grate higher up and indirect. I sear first and then finish instead of doing teh reverse sear.
We’ll be kicking off our football season by grilling cheeseburgers and having hand cut French fries tonight. The back porch Yeti is restocked and Ms. Jan’s wine is chilled. Let’s get up and go Gators! Life is good in Gator Nation!
Bone-in Rib-eye, with baked potatoes, corn on the cob and tossed salad. Keeping it simple to kick off the season.
OMG the lasagna was great and we have lots of leftovers. Ate at halftime. The Gator football game was almost as good.

After the hottest summer I’ve experienced in the 22 years living in upstate NY …it wet and cooler today, so went with classic chili for tonight. It’s on its 2nd hour right now and just finished with the bean dump. Another hour should be good to go.
Do you prefer serving your chili in a bowl with crackers, over Fritos with cheese, or over a plate of rice topped with cheese, or some other way? Here we like it over rice topped with Sargento shredded cheddar cheese.
Tonight we’re going with a hamburger, elbows, vidalia onions, Sargento Four State shredded cheese, and sour cream casserole. Our sides will be a pot of fresh zipper peas and Five Cheese Texas toast. Other than rice, all of the above. Usually diced onions and cheese …then alternate between saltines & Fritos. I’m generally all in with Fritos when I go bowl O’ red Texas chili.
Grilling some pork chops on the KJ tonight. Also making a saute of cabbage and onions and some mashed potatoes.
Tonight we’re going to have breakfast for supper. It will be fried cubed steak, eggs, grits, and cat head buttermilk biscuits. Today we’ve got the 90*/feels like 101* kind of panhandle sunshine/heat/humidity. The back porch is ready for the relaxing part of the day. Adult refreshments are available as desired. Another wet day here @66. Lucky for us we have leftover chili. I froze a meal for the 2 of us and there is just enough leftover for 2 nice sized bowls. Making a tossed salad as well, to fight off the heaviness. But Good Lord, it was good.
Smoking two chickens: one for tonight and the other for things like chicken salad, chicken taco and chicken enchilladas later this week. Also making scalloped potatoes with fennel.
Defrosting some sauce from a few weeks ago. So going with Sunday Sauce & meatballs over thin spaghetti with garlic bread, tossed salad and a glass of chilled Cabernet. Can’t wait.
Tonight I’ll be grilling bone-in country cut ribs indirect over cherry wood smoke seasoned with coarse black pepper and Everglades seasoning. Pat’s Homade on the last two turns. Baked potatoes will be on the top rack. Inside we will have a pot of fresh pinkeye peas with snaps and pod okra. The back porch is open and ready for your leisure.
