Back from St Augustine Beach. Making chicken tinga for tacos. I will make the tinga before the game and warm it up for tacos after the game. Also brining some tick pork chops in a salt, brown sugar, allspice and bay leaf brine for tomorrow after the game The pork chops will be served with sauteed red cabbage.
Crawfish boil time!!! Just the wife and I so… 15 lbs of crawfish 2 sausages And a lb of shrimp Beer galore and baseball. Should be a good Sunday!
We are grilling wings tonight. Seasoned with Everglades seasoning and coarse black pepper. Our side will be a cold tray. Almost a summer time day here today—sunshine and 86* The longnecks are ice cold and the wine is chilled. Life is good in Gator Nation!
Ha!!! Definitely 15 lbs. You know me! I am not 150 lbs! We take the meat from about 5-6 lbs and make different dishes. Tacos, pasta, etc. Side note, it was all amazing.
Got it. I often cook things that are way more than I need for the day. Why only smoke one chicken when you can smoke two or three with the same effort? Etouffee on the menu soon?
We are working with the leftovers column tonight. We are finishing off the pot of chili from a few days ago served over white rice and topped with Sargento shredded sharp cheddar cheese. We had the appearance of an almost late fall type day—49* for a low at sunrise and 54* was our high. Cloudy overcast day with 12-15 mph winds outta the NW. Made for a chilly day. Tonight I’ll have Jim Beam Black/Extra Aged over cracked ice and Canda Dry Zero ginger ale. Ms. Jan will stick with her chilled wine. Got my riding mower serviced and new blades put on today along with getting my chainsaw a tuneup. Life is good in Gator Nation!
Nice to get a little cool down. This just posted on my Nextdoor news feed......(his spelling)..... In support of the Ukrainian people, I made a big bowl of my mother's Ukrainian Beet Borscht. If anything will give the Ukrainainin people resolve brave and strtong it wlll be my Mom's Beet Borscht. It worked for me. It's a shame there's no longer a Borscht Belt for this Jewish Comedian to play after he prevails againts Putin - the murdering autocrat who is a threat to democracy..
Making chicken piccata tonight with wide egg noodles. Tomorrow just quickly throwing some hot dogs together before heading to the game. Also getting a new metal roof installed. Our original one was old when we bought the house about 37 years ago. The "decking" is cedar boards with gaps and it is in great shape. Nothing like 100 year old cedar heartwood. Most of the fascia needed replacing but only a small amount of soffit repair is required. In other home repair news I re-caulked our bath tub. We noticed a little bit of water on our kitchen floor under a doorway beneath the tub. When my son took a shower this morning there were a few drips. Hardest part of the job was digging out the old caulk.
