No mashing here. Slice in half and remove pit. Then slice each half in half. Then peel off skin which leaves you with 4 sandwich ready slices. I used white Wonder bread - but no doubt some nice fresh whole grain bread would have been better. The rest is just as you'd think. Tuna fish salad on bread - then layer avo - close up - and enjoy! As I was making it though I wondered about using a flour tortilla and making it burrito style in which you could use the avo in mashed version.
I think adding some sprouts would have provided a nice crunch & health component...now that I think about it. Well, my new carbon road bike arrived today. Came partially assembled and I finished the rest - 45 minutes. Inspired by Lurk's record setting battery replacement, no doubt. I still have to set the seat and handlebar heights and then adjust brakes and shifters as needed. Ordered on Jan. 14. Built - packed - and then shipped from factory in China on Jan. 26. Arrived in N.Y. on Feb. 7. Delivered to my home on Feb. 11. Total time from placing the order to delivery to my door = 28 days (4 weeks). Amazing! VERY lightweight! What a beautiful bike!
What components? I used to race bikes, BTW. One race bike I had was a Spooky Skeletor with mostly 7900 Dura Ace components. The Dura Ace brakes didn't work, so I swapped a set of Zero-G brakes that I had on another bike. My race wheels were Edge (now Enve) deep section carbon sew-up wheels with DT Swiss hubs. I still see these wheels in the TdF. I remember getting delivery of them at home and thought that the box was empty. They are both strong and light. I also had an Edge carbon fork. The bike frame and the wheels were sold to me at manufacturer cost as they were both sponsors of my race team. Eventually the Spooky frame cracked and I moved almost everything to my older race bike that was a 2002 Lemond Zurich. A heavier bike (steel instead of aluminum) but it fit me perfectly. Fit is the most important thing.
Tonight is hard shell tacos. I made a tomatillo/avocado salsa as a topping along with the usual ones.
Shimano 105 and up is totally race worthy. In fact when Shimano had the octalink bottom brackets with 9-speed all of my racer buddies got rid of their DuraAce bottom brackets with loose ball bearings in favor of the Ultegra sealed bearing bottom bracket.
Well tonight's dinner fare was just indescribably delicious. But I will describe it anyway. Black bean and Pineapple Quesadillas! So easy to make. The best part was having fresh sour cream on hand to dollop on top before consumption! That part was just sheer luck! I'm stuffed!
Here's the photos I promised of my 6" Rex Begonias. In the 2nd photo are the other plants - plus 3 'Iron Cross' Begonias in 4" pots. While these aren't necessarily large full examples, they are what I consider to be excellent starter plants for the upcoming growing season. These Begonias can be a bit finicky so I'm looking forward to the challenge of my horticultural skills and instincts....
Not making dinner tonight. Getting gyros and stuffed grape leaves from Gyro Plus. Today is my late FIL's birthday so we are doing nice things for my MIL. Tomorrow is my late mother's birthday. She always got half-priced chocolate from us kids way back then. LOL. Today I fixed a leak at the base of the spout on our kitchen sink. To get to the old o-ring you had to unscrew it and doing it "by the book" with a rag between channel locks would not work. A rag between the jaws of a pipe wrench did not work. A pipe wrench biting into the metal just barely worked and it took almost an hour to get it off. I did put a new o-ring in with silicone grease and the leak is fixed. It also looked like there was factory installed Loctite on the threads. WTF? BTW I figured out that the o-ring was a #12 that was dirt cheap at Lowe's. The OEM o-ring was a lot more expensive and back-ordered everywhere. I bought ten for half the price of one OEM o-ring without shipping.
Tonight we’re going to have a freshly made pot of Taco Bean Soup topped with Sargento shredded Tex-Mex cheese and Tostitos multi-grain scoops on the side. We had 30* this morning and a high of 70* Typical panhandle weather…. The back porch is open and ready for your company. Ice cold longnecks and chilled wine are available as desired. Speaking of repairs, there is a problem with my Bosch EcoSense dishwasher. The way it would dry dishes is to circulate very hot water at the end of the cycle and then you are supposed to vent the machine. Not a leave it and forget it deal, but more energy efficient. Well, everything works great except for heating the water at the very end of the cycle. My dishes get clean, but need to be wiped a bit at the end. The recirculation pump works fine, but the heating aspect is broken and there is no way to fix only that part of the pump. The cost of a new recirculation pump is over $200 so if I fix it myself it would be that cost and all the cussing along with replacing the part. I wonder if we should just spring for a new dishwasher. We have had it for a long time.
Nice job on the faucet repair, Lurk. I hate plumbing. 25 years here and my dishwasher has never worked. I do them by hand. I actually enjoy how clean my hands are afterwards. Picked up provisions for Mom today and there were no fresh chicken breasts available - just frozen. So I elected to go through the Popeye's drive through to at least get her some chicken nuggets. They have them in 8 packs so I ordered (3) 8 packs, thinking 2 for Mom and 1 I could bring home for Winkipop. Note I stayed away from ordering tenders, because of the pricing mix up last time. Well......took over 15 minutes to get my order. Only 3 cars ahead of me. Asked what the holdup was and was told "the lady in the first car ordered a chicken sandwich and they take 7 minutes to cook." I didn't say anything - just took my order and left having refrigerated items in my car I needed to get to Mom. Got to her place and the nuggets are all in one box and they were cold and tiny - I'm not even sure there were even 24 of them. I didn't count. Just left the box for Mom and smh. I don't foresee ever going there again. You have to wonder why they hold up an entire line of cars for that long when all they have to do is ask that person to pull ahead so those behind can get their orders. I mean - it's fast food - duh. Poor management, obviously. /rant.
Tonight we’re working on cleaning the refrigerator out by having leftovers—we’ll be finishing off the pot of chicken’n’rice with grilled cheese sandwiches as our side. Sunny day here today with light wind and quite pleasant. Still though one more day with morning low of 33* and a high of 71*…… Ice cold longnecks and chilled wine are on the back porch as desired. Tonight I’m going to be grilling bone-in country cut ribs indirect over cherry wood smoke-seasoned with coarse black pepper and Everglades seasoning and Pat’s Homade on the last two turns. Baked potatoes will be on the top rack. Inside we’ve got a freshly made Caesar salad for our other side. The back porch is open for business and stocked with ice cold longnecks and chilled wine. Life is good in Gator Nation!
Made a chopped salad last night. Tonight will be hot Italian sausage with arugula and orecchiette pasta.
Boy it's nice to have the temps outside a little more reasonable. I wore shorts today and planted some new flowers at Moms. Going back tomorrow to do some paver repairs. I got a new banner flag for her too but so far she hasn't mentioned it so we'll see how long it takes...ha ha. It's a "US Navy veteran lives here" banner - 3x5. I also ordered a custom birthday cake for her from Walmart today. It will have royal navy and gold colored decoration and a custom greeting for her. My step-brother and his wife are driving up from down south for her birthday on Sunday. Originally my SIL told Mom they wanted to take her out somewhere. I got involved and got the plans changed to dinner at home. I'm still not comfortable dining out anywhere - especially for my 99 year old Mom. Hopefully things will be better a year from now when she turns 100 and we'll have the option to go out with some reassurance. I will make all the food and beverage arrangements. Thinking steaks, fresh garden salad, baked potato, fresh rolls, and veggie. Stay safe!
