Outside the dugout: What's cooking?

    Still had some escarole and pork tenderloin to use so escarole soup again.

    My quarantine ended this morning so I was informed that bone-in country cut ribs grilled indirect over cherrywood smoke were requested.

    We will also have baked potatoes on the top rack with a freshly made Romaine salad topped with fresh vine ripe tomatoes.

    The back porch is open for everyone’s pleasure. Ice cold longnecks and chilled wine are available.

    Tonight we’re going to enjoy fried catfish, cheese grits, Ms. Jan’s homemade coleslaw, and hush puppies. I’ll season the catfish with salt, coarse black pepper and Old Bay’s seasoning and use Hoover’s white fine-sifted cornmeal.

    We are (rightfully so/Aug-23) in the middle of dog days. 92* for a high with a heat index of 107*

    Back porch ice cold longnecks and chilled wine are ready for the afternoon/evening.

    Watching the local weather forecast last night - the weatherman says he has good news. From this point forward - our average highs will go back the other way. But earlier he showed we had a high of 95 - with our average being only 91.

    I was thinking....how could it be good news that our average high is going down, while we are recording higher than average highs?

    Don't these people ever think about what they are saying - before they say it?

    Leftovers, semi leftovers, and "new food".

    Leftover pesto chicken breasts, didn't use all the green beans the other day, and scalloped potatoes with leeks.

    Today I found out that the Julia Child PBS series The French Chef was available on Amazon Prime, but only until the end of August.

    I have been been binge watching and learned some tips for sautéing.

    Also learned that she didn't know how to properly construct or cook a hamburger. She did get the finger test for steak doneness correct.

    Also got a great tip about trussing a chicken for roasting. First remove the wishbone and then truss the bird. Makes so much sense.

    The scalloped potatoes were not what I usually make. It was with leeks instead of fennel or roasted poblanos. It was great. I used a recipe from Epicurious but I used a lot more heavy cream and a lot less milk.

    Tonight I’ll be grilling hamburger steaks from a freshly ground boneless chuck roast.

    Inside we will have a pot of fresh green beans and new potatoes. There will also be freshly stewed yellow squash and vidalia onions.

    The back porch has been quite pleasant the last couple of afternoons/evenings. Of course the ice cold longnecks and chilled wine will have a chance to do their part.

    It turns out that only the first season comes with Amazon Prime.

    Lots of cringe worthy things like tasting things made with raw eggs, but also lots of good tips.

    Tonight I am making a panang Thai curry with shrimp to be served over jasmati rice and an avocado salad with a spicy dressing. I added some datil peppers to the curry for a bit more heat and to make it have a local flavor. The main flavor is kaffir lime leaves as it should be.

    Take-out tonight and visiting friends. Taking a 2018 Philips Hill pinot form Anderson valley and a 2017 Gary Farrell pinot from the Russian River area of Sonoma.

    We have been supporting Toby Hill from near the start. When we showed up for a tasting one March day a long time ago he was manning it. He makes really nice wine at an affordable price.

    Tonight I’ll be grilling chicken halves seasoned with coarse black pepper and Everglades seasoning. And yes, Pat’s Homade on the last two turns.

    For our sides tonight we’re going to have the leftover green beans and new potatoes and bi-color cob corn.

    Off and on thunderstorms here today so the afternoon is pretty muggy.
    Ice cold longnecks and chilled wine should help us get through it though.

    Tonight we’re cooking inside. I’m fixing Salisbury steak and gravy with mashed potatoes. Our other side will be fresh petite butter beans and whole kernel yellow corn.

    Fresh yeast rolls will also be on the table.

    Pretty pleasant here today—high of 90*/heat index of 97*—
    Back porch ice cold longnecks and chilled wine will work well today.

    Tonight we’re going to put a dent in the leftovers.

    Got the grass cut today-it took a little more outta me than I thought-but I recovered well. The back porch libations will enhance a speedy recovery I’m sure-;)

    I have half a head of cabbage and though that it would be great for making Carolina style vinegar slaw, so I bought a nearly six pound pork shoulder today. It looked better than the St Louis cut ribs. So either tomorrow or Sunday pulled pork will be on the menu.

    Microwave corn on the cob. 4 minutes per ear. Butter, salt, & pepper. Yum!

    I may have mentioned my first job out of UF was a head grower for a Mom and Pop nursery in Lake Jem. Owner also had a corn field. He'd get a pot of water boiling and then go harvest a few ears. Talk about fresh!

    We mostly sold rooted cuttings for dish gardens. Ti Plant ( a miniature variety called 'Baby Doll'), Aglaonema, both green and red prayer plant, Calathea, Sanderi Dracaena, Pothos, and of course Philodendron oxycardium. I rode a bike to work I lived so close. Now the place is filled with housing developments. Sucks big time.....
