Got some corned beef cooking... Some Jewish rye bread... Swiss cheese Thousand island dressing, not Russian dressing... No sauerkraut (yuck!) Ah yes, hot, fresh reuben sandwiches.
Just finished shredding a smoked chicken, but I left the legs and wings intact for my son. The light rub of ancho pepper and coffee was really good. Fed some chicken skin to my dog that was very attentive during the process. My fingers smell great.
I hope that eye was a typo for rye. And as for me the salad dressing on a reuben is yuck and the kraut is divine. To each his own. Speaking of kraut I think it might be time to make some kimchi. I have a lot of the correct Korean red pepper. Then make some bulgogi.
Since Alan fired up his ol’school stick burner smoker to cook his ribs day before yesterday he smoked an extra slab for tonight’s supper. (The air-fryer reheats them as moist and tender as anything we’ve ever used). We will have a fresh spring salad and rice pilaf for our sides. Ice cold longnecks and chilled wine are back in play for the late afternoon and early evening and into the ballgame. Life is good in Gator Nation!
My buddy brought over some Collard Greens this morning. I will have that a little later. For lunch today since it was Taco Tuesday I had Tacos from Mi Mexico. 3 for $5. They were awesome! They have a Speedy Gonzales lunch item (1 Taco, 1 Enchilada, and choice of rice or beans). Makes me smile to see this on their menu.....
I was talking to my buddy today - the one who brought over the collard greens - and told him about the seaweed wrap being kinda chewy. He said he uses lettuce leaves a lot to make wraps. He also cuts off all the seeds from his cukes....something I hadn't thought of. I will keep experimenting.....always great exchanging thoughts on this subject so near and dear to my heart. No - not the cooking part....the eating part!
Yeah but that crunch from lettuce........you know what they say........everything in life is a tradeoff!
Ballpark food tonight. The only thing I cooked today was nine "bird blocks" for feeding my fine feathered friends. I would go broke if I had to buy my bird feeder blocks from Wild Birds Unlimited and the birds prefer mine anyway. I get lots of orioles in the winter and warblers all year round feeding at my blocks. Right now I am getting lots of catbirds getting ready to migrate eating my blocks and catbirds are not supposed to be attracted to them.
Much respect to you Lurk for looking after our wildlife. I watched a nice video about a woman pulling hooks out of shark's mouths. It was from The Dodo...easy to find if you're so inclined. I know this is not something that necessarily fits in with the usual food related content here but will say it anyway. You know how sometimes you get a hankerin' for a particular food item? Well lately for me it's been baked beans. In particular "beanie weenies"! So I have been making my own by cutting up hot dogs and putting them into my baked beans. I'll make about 5 small containers of them ahead of time so I can just pull one out of the fridge to snack on. Those small Feta cheese containers work really great for this. And my dog has been doing pretty good lately with her rear legs so I guess that "farm raised" Tilapia really helped! Today when I got home and opened the back patio door for her to go outside she did a little jump going through the doorway!
Got a bottle of this in the mail today from a Porsche buddy in Arizona. He saw my post about my new Volvo and had a technical reference book from his he didn't need any more and wanted to send it to me. He also included a brand new switch assembly for the console (power windows, mirrors, etc.) that I guess he bought and never used. Nice when someone is thoughtful like that. Now I have to figure out what to send him back in addition to a thank you card. Maybe a big jar of local honey? Buddy of mine makes and sells it here. I will go by and see what he has..... I bet this stuff burns!
We got back home yesterday late afternoon from Jasper, Ga., and are back to our normal routines. Tonight I’ll be grilling bone-in country cut ribs indirect over cherrywood smoke. Baked potatoes will be on the top rack. Inside we will have a pot of fresh pinkeye peas w/snaps and fresh pod okra. Jalapeño cornbread will also be on the table. We have a beautiful blue sky and sunshiny day to enjoy our ice cold longnecks and chilled wine this afternoon/evening. Life is good in Gator Nation!
Where are you getting fresh okra this time of year? I am thinking maybe far south in Florida or Mexico. It will be a long time before it is in season where I live.
Actually we bought fresh quantities late summer, vacuum packed it, and get it out of the freezer when we want some.
Tonight it’ll be bar-b-crewed chicken halves seasoned with coarse black pepper and Everglades seasoning on the grill. Correct, Pat’s Homade on the last two turns. Our sides will be a pot of fresh green beans and new potatoes and fresh bi-color cob corn. Sunshine, blue skies and 80* today. Ice cold longnecks and chilled wine are the order of the day.
