    Since boneless/skinless chicken breasts were BOGO at Publix recently I am making chicken marsala tonight. Yesterday was left over turkey enchiladas in green sauce with a kale/cabbage bag salad.

    Getting the mushrooms to dewater always takes much longer than the recipe I follow suggests. That is a crucial step in getting it right. And the "pounding" of the chicken breasts to the right thickness requires cutting them in half first. I think my recipe is really old when chickens were not bred and raised to have very large breasts.

    Tonight we are going to be grilling chicken halves seasoned with coarse black pepper and Everglades seasoning. Pat’s Homade on the last two turns. Baked potatoes also will be on the top rack of the grill.

    Inside we’ve got fresh steamed broccoli and the left over cream 40’s & petite butter beans.

    Last night we had a big time thunderstorm, lightning was booming along with the thunder. We had 2 1/2” of rain in the gauge this morning.

    Looking forward to our afternoon/evening refreshments when charcoal is lit.

    Yeah, that storm was something else! I spent a few hours this morning cleaning up here but nothing like what Deland experienced.....o_O

    From tonight's weather segment the tornado was 500 yards wide and went approx. 4.5 miles. Total of 82 properties affected with estimated $3 million in damages.

    No one killed though!

    I was here when we had one in our neighborhood - missed me fortunately, but it did tear up some homes! I think that was over 20 years ago.

    My MIL wanted to buy us dinner tonight so we had Thai take-out. She feels guilty that we make her dinner almost every night.

    I don't mind because I like cooking.

    Tonight I’ll be grilling hamburger steaks made from freshly ground boneless chuck roast. Baked sweet potatoes will be on the top rack.

    Inside we will have a fresh Romaine salad topped with vine ripe tomatoes.

    Thunderstorms are predicted for the afternoon and evening so our adult libations will likely be to the sounds of rain on the back porch tin roof over that of watching a sunset.

    Tonight I am making thin pork chops with a fig, cream, shallot, balsamic vinegar (and some herbs) sauce with a salad.

    Using black mission figs.

    Same location and better/more authentic Thai food than Bhan Thai.

    Still more southern Thai than northern Thai. They are not the same.

    Making Tex-Mex style tacos tonight (not some of the awesome tacos you might find in Mexico). Using ground turkey instead of beef.

    I did make a tomatillo/avocado salsa as a topping. I had to use jalapenos instead of Serrano peppers because my Publix was all out of Serrano peppers. Not a huge deal.

    Tomorrow I will make some baked beans and grill some chicken thighs with Pat's Ho-Made as the finishing candy.

    Tonight we are going again with grilling boneless country cut ribs indirect over cherry wood smoke with some Hickory Hollow’s finest smoked venison sausage to go along with.

    Inside we’ve got fresh green beans and new potatoes and fresh bi-color cob corn and deviled eggs.

    It’s been hot and humid here again so our favorite adult libations will again be on hand.
