Sorry gang—I forgot about posting supper—tonight we’re gonna have Ms. Jan’s Mexican Chicken Enchilada casserole, refried beans, and a fresh Romaine salad topped with fresh vine ripe tomatoes. Ice cold longnecks and chilled wine are the libations of the day. Life is good in Gator Nation!
Yesterday evening I was Zooming with family and my older brother mentioned that he would have to leave early to deal with his pulled pork. I asked him how he smoked it and said he uses an Instapot. I gave him chit over that. No bark and any smoke flavor would be artificial. Anyway he said that his son (my nephew) that lives in Austin won a Big Green Egg at a chili cook off. Winning even a neighborhood chili cook off in Austin is no mean feat. My brother said that having a bunch of your friends show up and making a lot so that everyone had as much as they wanted was also a part of the winning strategy.
Tonight I’m going to be grilling boneless country cut ribs indirect over cherry wood smoke. Yep, Pat’s Homade on the last two turns. Inside we’ve got a pot of fresh green beans and new potatoes and fresh bi-color cob corn. To go along with that we’ll have jalapeño cornbread. We got a few showers today so it was inside work and a trip to the grocery store. Ice cold longnecks and chilled wine win out again today. Life is good in Gator Nation!
I just ordered some of the Kewpie brand Japanese mayo from Amazon also to try out. Mostly using for tuna, egg, and chicken salads and on subs and burgers. Hey, we're getting some NICE rain tonight! Started around 6pm so going on for about 2 hours so far. We really needed it! Keep chargin'!

It ain't kosher, but many of my Jewish friends loved bacon. In college one of my friends was a son of a rabbi and did his best to eat kosher. He would not eat popcorn that I made in my oil based popcorn popper because I once used to to warm up cream of shrimp soup. The health reasons for not eating pork are long gone. I did make the mistake of telling my oldest son that swine are actually pretty smart and now he won't eat pork. He is halfway to what he said he would do after he watched Dr Doolittle as a kid: I will become a vegetarian. But not until I am much older.
Going to grill some all beef sausages tonight for a quick and easy dinner. My better half will roast some broccoli and we are going to cheat and warn up some canned baked beans. I always find them too sweet, but that is just me. We need a quick dinner before going to see some friends. We normally sit about 12 feet apart in their yard and drink wine, but if it is raining we can move to their garage and still socially distance. Nice folks and the dad of the family worked with my wife a long time ago in environmental engineering before she went to The Dark Side and became a lawyer. I also played intramural basketball with him. And his first wife was a local politician that we supported. Fun fact: I made the first ever political candidate web site in Florida for his first wife and posted it on Alachua Free Net. And tomorrow I will start soaking some beans for a better version of baked beans. I am thinking that tomorrow I will defrost some pork tenderloin and maybe go out for some stir fry veggies. And if there is any pork left over I can use it for escarole soup sometime soon.
The kitchen is starting to smell really good as I’ve got a pot of chicken taco soup simmering for our evening meal. We usually garnish it with Sargento Tex-Mex shredded cheese, sour cream, cut up jalapeños, and Tostitos scoops. We’ve had thunderstorms off and on pretty much all day so the heat is down some but the humidity is still here. We busied ourselves with inside housework and catching up on the laundry. Ms. Jan is sticking with her chilled wine and I’ve iced down some longneck Pacifico’s for the afternoon/evening. Life is good in Gator Nation!

Roasting a pork tenderloin finished with a Sichuan sauce. Stir fried baby bok choy and gai lan (Chinese broccoli) with garlic, ginger, and Sichuan peppercorns. And rice, of course
Today we had our normal hot/humid Panhandle day with very little cloud cover—so—I cut our grass and Ms. Jan worked in her flowers and plants this morning. I will be grilling hamburger steaks from a freshly ground boneless chuck roast. Inside we’ve got fresh green beans and new potatoes and fresh bi-color cob corn. Ms. Jan’s making her yeast rolls to go with. With the temps and humidity today I restocked the Yeti with longneck Mich Ultras and topped off the Yeti with fresh ice. Ms. Jan’s chilled wine is also ready to go. Life is good in Gator Nation!
My better half will be making risotto tonight and I will be making caprese salad (fresh motz, tomato, basil, olive oil). I have the easier task. But I did put a dry Riesling into the fridge a while ago.
I forgot that I asked my MIL to defrost an eight pound pork shoulder a while a go. I will be waking up early tomorrow. I have already prepped the KJ.
The pork shoulder went on about 30 minutes later than I wanted. I hope it is one that cooks quicker than the 90 minutes per pound average or it won't rest for a full hour. Carolina slaw has been made and is in the fridge. I stir it every once in a while. Baked beans are in the oven. I can finally rest. Funny thing is that pulled pork sandwiches taste better with really cheap buns.
We are taking the night off from the grill and kitchen. Tonight we are picking up pizza. Of course ice cold longnecks and chilled wine go great with pizza pie... Life is good in Gator Nation!
