    My wife bought two pork shoulders. I will smoke one for us and smoke the other for some friends.

    We’ve got a big pot of Taco Bean Soup simmering on the stove—it’s doing a great job of smelling up the house. We like the Garlic & Black Bean tortilla chips with this dish.

    The back porch Yeti is loaded with fresh Mich Ultras and ice.

    Going to warm up the leftover Bolognese sauce for dinner tonight and boil some orecchiette as the pasta and make a salad to go with it.

    Tomorrow I will smoke two pork shoulders and make a huge amount of Carolina slaw. Half will be going to some friends.

    Time to walk the dog.

    Tonight I’m going to be grilling boneless country cut ribs indirect over applewood smoke with baked potatoes on the top rack.

    Inside we’ve got fresh green cabbage steamed along with fresh steamed yellow squash and vidalia onions.

    The ice cold longnecks are quite enjoyable watching the sun fade into the sunset creating God’s two favorite colors—Blue and Orange.

    Orecchiette is not a traditional pasta to use, but I like it with this sauce. Tagliatelle is the traditional, but its close cousin fettuccine can be substituted if your pasta source is Publix or Winn Dixie. The very best is making the pasta fresh, but I don't have the time usually.

    Bolognese sauce is divine in its texture and layers of flavor. Most people that only know Italian cuisine from Olive Garden and the like would complain that it isn't spicy enough. There are no spices in it. It is a subtle party in your mouth. It does take some skills to pull it off as you need to know how to "sweat" the veggies to get just the right flavor. But even if you don't go to that bother it is still an awesome sauce.

    Actually only smoked one of two pork shoulders today. For some reason my wife wants me to cook the second one later.

    About a month ago, I made huge mess of pinto beans flavored by smoked hocks and pork necks. I also minced onions and jalapenos and simmered until the meat was falling off the bone.
    The Missus and I ate on that a few nights over brown rice. Then I froze about 5 1-Qt freezer bags full of this gelatinous nectar of the gods.
    Yesterday, I pulled out a bag into the refrigerator to defrost.
    So tonight, we are having the beans and cornbread. The old lady loves quinoa, so for the first time, we will have the pinto beans over the quinoa.
    Just trying to be healthy in the age of the corona :)

    Tonight we’ve got Ms. Jan’s chicken parmesan in the oven with fresh Romaine salad topped with vine ripe tomatoes and garlic bread.

    A nice red Cav to go with.

    Backporch ice cold longnecks are the best.
