After braising for almost two hours there is a lot of liquid left with my carnitas. Maybe my Dutch oven seals better than I thought if the lid is put on just right. I never had this problem before. I might have to fish out the pork shoulder bits and run it up to high heat for a while.
Boiling down with the pork in a bowl and the orange and bay leaves removed while the oven heats to 450 F. Almost there.
So Digiorno and Jim Beam would be??? Who am I kidding? I wouldn't bother to heat up an oven when eating by myself. Papa Johns and Jura Scotch. Prophecy actually. Superstition seems to be the most common Jura Scotch here in the US but I like Prophecy. It is quite peaty and delicious. Not cheap though...
Got some company coming over tonight-- Smoking two racks of beef plate ribs on the Egg over applewood smoke with baked potatoes, fresh salad topped with vine ripe tomatoes and grilled multi-grain bread. Lighting the smoker @ 1:00pm with ice cold Mich Ultras for companionship.
"What's Cooking" tonight is leftovers. And I am hearing no complaints. Getting my phone fully charged to stream the game to my TV. My computer is 8 years old and doesn't have the skilz to stream to my TV.
Going with Thai Stir-Fry with beef over a bed of rice here tonight--got an early trip to Albany, Ga. to see my 94 yr old Mama in the morning on a day trip.
Lots of eating in front of the TV with the Gators away. I am grilling a mess of chicken legs finished with Pat's Ho-made BBQ sauce. Also making spicy sesame noodles with Thai basil and chopped peanuts. So today was a trip to the Asian grocery to get my favorite Asian egg noodles (from Vietnam) and a bag of Thai basil. Odds are my wife will want a Tao-Tini cocktail tonight now that we have Thai basil in the house.
Cooking is easier than hitting a curve ball and WAY easier than throwing one. And the most complicated recipes that I have followed have been way easier to understand than the infield fly rule. You're a smart guy. You can figure this cooking out.
It's been years so I stopped in to a KFC. Was appalled at the small pieces and lack of flavor. Then, a week later, called out to Papa John's and paid $24 overall for what I thought was a very average pizza. There are reasons one needs to do his own cooking and these are two of them.
I fully understand the disappointment with KFC chicken. I can cook chicken at home way better than that. And I agree that Papa John's is not very good pizza, but I don't have the ability to properly make pizza at home. You need a REALLY hot oven to do it correctly. With my gas oven and a pizza brick I can make so-so pizza. @74nole, can you get your Green Egg hot enough to do a pizza correctly? I bet that you can, but I don't have one.
Yes Sir you can get the Green Egg up to 700 degrees hot--- You just better be damn careful when you "burp" it to open it---I've actually got an old broom handle with a notch cut into it to put under the lid handle so I'm standing back a few feet.
