I would venture to guess that you are cooking it close to the coals and the radiant heat is crisping the skin while the conductive heat is not too hot to get the meat dry. But I will just say....good for you.
Some people saying we might not get Kelly because UF wants to micro manage too much to ensure compliance and Kelly doesn't want that much going on. Not sure if BS or not but he is known for wanting full control pretty much.
I use an electric smoker. No water pan on chicken. Been doing this for fifteen years, tried every variation under the sun. Low and slow for full birds

The main difference between smoking and roasting is the heat source and after flavor - your method uses an oven (electricity/gas/whatever), mine uses a combo of wood and charcoal. Temperatures are the same-ish and the result is similar. I just like the extra level of flavor smoke gives.
You’re wrong on temp but right on wood. I’m an apple wood guy myself. And I don’t use much - looking for a hint of smoke on the skin, not a smoked out breast that tastes like an ash tray.
